The Redondo Iglesias Serrano Slice, sourced directly from the producer, is the finest Jamon Serrano available in the USA. On the bone, the most traditional format for dry-cured jamones, just as seen in tapas restaurants across Spain. Serrano boasts a dry texture and a perfectly balanced flavor, with notes of porkiness, salinity, sweetness, and earthiness. We use minimal salt to allow the complex flavors of this raw food to shine.

Our production is characterized by a deep respect for tradition and an unwavering commitment to quality. We take no shortcuts, eschewing the use of heat to accelerate curing or mechanical pressure to sterilize the ham. The result is a Jamon Serrano that is less salty and more complex in flavor compared to other brands.

The raw hams are first buried in Mediterranean Sea Salt for 10 days, then rinsed and moved to post-salting rooms before being cured in our Bodegas. Our Jamon Serrano loses approximately 38% of its water content, concentrating the flavor and yielding a dry, yet unctuous texture.
