The harsh environment of the Moroccan desert, with its extreme temperatures, rocky soil, and water scarcity, causes the olive trees to produce a high quantity of polyphenols (antioxidants) as a survival mechanism. This results in the olive oil containing an extraordinary amount of hydroxytyrosol, a naturally occurring compound with significant health benefits.

Atlas Olive Oils has carefully approached all aspects of its organic olive oil production process, adopting sustainable procedures to ensure environmental and social responsibility. The company's organic EVOO is made from a blend of old bicentenary and modern orchards, with cultivars including Picholine du Languedoc, Picholine Marocaine, Arbequina, and others.

Grown in the Marrakech region at an altitude of 390 meters, the olives are harvested from the end of September to the end of December. The oil is extracted using a two-phase continuous system, with a maximum temperature of 26°C, ensuring the preservation of the oil's exceptional quality and flavor.
