Naturally rich in polyphenols, particularly hydroxytyrosol, the EVOO from Atlas Olive Oils is a testament to the harsh yet special environment of the Moroccan desert. The extreme conditions, with summer temperatures reaching 127°F, rocky soil, and limited water, cause the olive trees to experience a "panic" survival instinct, resulting in the production of an extraordinary quantity of antioxidants. This unique process yields an EVOO with an exceptional hydroxytyrosol content.
Atlas Olive Oils' sustainable approach extends to every aspect of their production process. Their organic EVOO, "Les Terroirs de Marrakech," is the embodiment of their commitment to environmental stewardship. This ultra-premium EVOO is crafted from a blend of old bicentenary olive cultivars, including Picholine du Languedoc, Picholine Marocaine, Menara, Haouzia, Chemlali, and Dahbia, grown in the Marrakech region at an altitude of 390 meters.
Boasting a well-balanced soil composition of 30% clay, 35% muddy/loamy, and 35% sandy, the orchards are pruned using a traditional large-tree cup method, with a density of 100 trees per hectare. This old bicentenary orchard produces 25,000 liters of EVOO annually, with a maximum acidity of 0.4% when bottled.
Harvested from late September to late November, the olives are first cold-pressed using a 2-phase continuous system, at a maximum temperature of 26°C, yielding between 10.5% to 13% oil. Packaged in elegant glass bottles, Les Terroirs de Marrakech EVOO is suitable for a wide range of culinary uses, from raw seasoning to baking and desserts, offering a well-balanced, sweet, and delicate taste profile with notes of greenery, cut grass, apples, almonds, basil, and sweet banana.
