Organic Cold Press Extra Virgin Olive Oil from Morocco
Category: la espanola olive oil extra virgin
Atlas Olive Oils, a 4-generation family company with a rich olive oil tradition dating back to 1887, is dedicated to producing superior quality organic extra virgin olive oil (EVOO) from its own family farms. Driven by a commitment to responsible development that respects the environment and people, Atlas Olive Oils has created job opportunities in the impoverished regions of Morocco, while preserving the local culture and land.
The brand's passion for the unique Moroccan terroir, combined with a focus on innovation, has led to the development of new orchards using state-of-the-art cultivation systems that prioritize environmental and human well-being. Improved soil conditions, careful cultivar selection, and meticulous tree growth management enable Atlas Olive Oils to produce high-quality olives.
Naturally rich in polyphenols, particularly hydroxytyrosol, the olive oil produced by Atlas thrives in the harsh desert environment of Morocco (with summers reaching 127°F, rocky soil, and limited water availability). This stressful environment triggers a "survival instinct" in the olive trees, causing them to produce a remarkable quantity of antioxidants, resulting in an extraordinary hydroxytyrosol content in the final oil.
Atlas Olive Oils' commitment to sustainable practices is evident throughout its production process. The company sources its olives from its own organic family farms in the Marrakech region, located at an altitude of 390 meters above sea level. The well-balanced soil, with a mix of clay, muddy/loamy, and sandy elements, provides an ideal growing environment for the diverse cultivars, including Picholine du Languedoc, Picholine Marocaine, Menara, Haouzia, Chemlali, Dahbia, Arbequina, and Arbossana.
The olive oil is extracted using a two-phase continuous system, ensuring the first cold pressing is done at a maximum temperature of 26°C, preserving the oil's delicate flavors and aroma. With a yield ranging from 11.5% to 15%, the resulting EVOO boasts a complex profile, with notes of red tomato, ripe banana, apple, culinary herbs, cucumber, and more.
Atlas Olive Oils' dedication to quality and sustainability has earned the trust of Michelin-starred chefs around the world. The brand's range includes the flagship "Atlas" EVOO, as well as specialized offerings like "Les Terroirs de Marrakech," "Desert Miracle," and "Atlas Natural Spray," catering to a variety of culinary needs and preferences.
In choosing Atlas Olive Oils, consumers not only enjoy a premium, organic EVOO but also contribute to the brand's mission of responsible development that respects the environment and empowers local communities in Morocco.
