OUR STORY
Fermín was founded in 1956 by Fermín Martín and his wife, Victoriana Gómez, who harnessed the traditional knowledge of raising and curing the best Iberico pigs in La Alberca, a practice that has been carried out for centuries. After years of dedication, they transformed this family activity into an industry employing over 100 people. Today, Fermín is led by Martín's children, Santiago and Francisca, who maintain the same principles that made Fermín a unique and artisanal project from the start.
For the past 60 years, Fermín has been dedicated to the traditional production and global commercialization of Iberico products. We control the entire production process at our plants in La Alberca Est. 23 (Salamanca) and Tamames Est. 27 (22km from La Alberca), which are surrounded by the magical landscapes of the region. Fermín is now present in more than 20 countries, and we are proud to say that we were the first Iberico brand to be found in homes and restaurants across the United States, Japan, Canada, Singapore, and China.

100% Acorn-Fed Organic Our organic Iberico products are produced on a separate line, with a manufacturing process that is free of genetically modified organisms and artificial additives/preservatives. Tasting notes: Bold color, intense aroma, pungent buttery flavor, and a very rich palate. Just one piece will create a memorable experience.
100% Iberico Acorn-Fed Made from a 100% Iberico free-range pig that doubles its weight eating acorns and grass during the "Montanera" season (October to February), this is the finest and most luxurious pork meat in the world. Tasting notes: Bold color, intense aroma, pungent buttery flavor, and a very rich palate. Just one piece will create a memorable experience.
50% Iberico Grain-Fed These products are the result of a cross-breed between 100% Iberico and 100% Duroc pigs, offering a more affordable, lower-fat option for everyday use. Fed on a diet of grains, these products have a strong visual fat marbling and subtle flavor, thanks to Fermín's generations of practiced artisan production methods. Tasting notes: Lower fat content with great marbling, outstanding flavor but the lightest among all categories, vibrant color but not as intense as other categories.
Authentic Serrano We are proud to offer you the authentic Serrano, made from pigs born, raised, and processed in Spain. Our high-quality Fermín Serrano products are made from older, heavier, and fattier pigs, resulting in a more complex and flavorful product. Here in La Alberca, Spain, a Natural Reserve declared a World Heritage site, we only use artisanal methods and extend the natural curing process to a minimum of 15 months for boneless pieces and 18 months for bone-in. Tasting notes: Great color, aroma, and taste on the palate. Perfect to enjoy by itself, on a charcuterie board, as a tapa, or added to any breakfast, lunch, or dinner recipe. Pairs well with Spanish beer, Albariño wine, Jerez, or a Tempranillo from the Ribera del Duero or Rioja regions.
Our artisanal mild chorizo is made from Iberico pigs, an original breed from Spain. The meat is seasoned with natural spices, resulting in a unique product of singular juiciness and flavor. Cured for 1 month using artisanal methods in La Alberca, Spain, a Natural Reserve declared a World Heritage site, this all-natural, gluten, and lactose-free chorizo contains no added nitrates or nitrites.
